Flourless Zucchini Brownies (GF, VG) Recipe

No fuss, no muss, no fancy pictures or long intros. Just the recipe to a delicious vegan, gluten-free brownie with loads of hidden veggies *shhh, no need to tell your toddler*
Ingredients:
- 2/3 cup creamy peanut butter
- 2/3 cup creamy almond or cashew butter
- 6 tsbp melted coconut oil
- 1/2 cup maple syrup
- 2 flax eggs
- 1 tsp vanilla extract
- 1 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 1/2 cup finely shredded zucchini (make sure to squeeze out all the water)
- 1/2 cup chocolate chips (dairy free)
Directions:
- Preheat over to 350F
- Line an 8" x 8" pan with parchment paper
- In a mixer, combine nut butters, maple syrup, oil, vanilla and flax eggs
- Mix in the cocao powder, baking soda and salt.
- Fold in shredded zucchini and chocolate chips
- Bake for 20 minutes or until a toothpick comes out clean in the centre
- Chill the brownies before transferring to the fridge
