Flourless Zucchini Brownies (GF, VG) Recipe

No fuss, no muss, no fancy pictures or long intros.  Just the recipe to a delicious vegan, gluten-free brownie with loads of hidden veggies *shhh, no need to tell your toddler*


  • 2/3 cup creamy peanut butter
  • 2/3 cup creamy almond or cashew butter
  • 6 tsbp melted coconut oil
  • 1/2 cup maple syrup
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cup finely shredded zucchini (make sure to squeeze out all the water)
  • 1/2 cup chocolate chips (dairy free)


  1. Preheat over to 350F
  2. Line an 8" x 8" pan with parchment paper
  3. In a mixer, combine nut butters, maple syrup, oil, vanilla and flax eggs
  4. Mix in the cocao powder, baking soda and salt.  
  5. Fold in shredded zucchini and chocolate chips
  6. Bake for 20 minutes or until a toothpick comes out clean in the centre
  7. Chill the brownies before transferring to the fridge
